can't help on the sunroof, but the answer to the wood work question is "carefully".

You start on a W108 dash from the bottom and work your way up. There are lots of philips screws that hold down the bits of trim. Several instruments have eustacions (sp?) that should be removed with a special eustacion wrench. Being very careful with a screw driver acting as a chisel is an alternative. Just don't chisel the wood.

The hardest part are the two side vents. There was a post here just days ago explaining them (or was it at the mbca.org forum?). I would look for that post.
