Since I have little kids, I buy cookies. I don't eat them often and the kids don't go through them before they go stale. I decided to try and use them instead of tossing them out.
I chopped up some vanilla wafers and some chocolate sandwich cookies (that I scraped the filling out of) in the blender to yield about 1-1/2 cups of cookie crumbs. Then I added 1/4 cup of sugar and 6 tablespoons of melted butter. I mixed it all together and pressed it into a pie pan and baked it at 350˚ for 10 minutes.
So far I've used this crust recipe for a peach pie and a pudding pie. It's crunchy and delicious and I think it's my new favorite pie crust.
