As for elk v. cow, it has a different flavor, but is very enjoyable. I wouldn't call it gamey, but I also process my meat immediately after harvesting. This business some have of hanging the carcass for days, not for me. Anything that was alive and is now dead, is also starting to decompose (plant or animal) My elk get gutted within 10 minutes, skinned inside of an hour, and processed into freezable sizes within 12 hours. It is much leaner than typical cow, due to the athletic nature of it's life-before-freezer. Not tough though. And that tenderloin.....mmmmm Those babies go right on the grill while the processing is going on.
