How hot would you run a 617?

I am trying to get as much heat as I can out of my 617 block for wintertime with my 2 tank WVO system (Frybrid) in the 85.
I put in an 87C thermostat that runs the car at around 95C measured with an IR thermometer at hottest part of the block. The car's temp gauge reads around 100C, for what thats worth.
Is this too hot? It never rises about the 95C measured with the IR gun, no matter how hard I run it in the current weather (60's today). It's nice for the WVO, it runs the WVO at 180-190F constantly at the IP inlet. With the stock the 80 C thermostat Im in the 170's.
The radiator is new in the last few k miles, btw.
