When it is that hot & your going up a hill. I would give the poor thing a rest from the air con.
It wont get above the boiling temp of the coolant until it boils some coolant away and then you are in trouble!! At highway speed the fan doesnt do much as the air is being forced through the radiator by your forward motion.
Just back off a bit on hills & turn the air con off on the uphill bits.
