If that really is all she ever does, then an oil service every 6 to 12 months wouldn't be bad. I'd assume she would drive it maybe on the weekends, let it off the leash, so to speak? If she drove it say 50 or 100 miles (longer trip)at least every couple weeks, I'd say go 12 months.
The car will give a warning based on time, mileage, and the actual ol condition, so i wouldn't sweat it too much. The thing holds over 2 gallons of oil so will hold quite a bit of gunk in suspension.
