Aside from one W126, I'm probably going to stay with the MT W123 cars as fun and economical, with some minor additions (extra sound proofing).

Here's my list of tools and parts feel free to comment:

Tools for the trip in a W123

Ό” drive deep well metric 6mm-10mm (reach glow plugs and other small nuts)
Ό” 3” extension, 6” extension and T-bar/breaker bar
3/8” drive std metric sockets 8mm-19mm (use Ύ” socket if no 19mm around
3/8” drive breaker bar and pipe, plus ratchet an 3-6” extension
8mm-19mm combination wrenches
5/166” 3/8” 7/16” combo wrenches for battery posts
Small vise-grip locking pliers
diagonal cutting pliers
regular slip joint pliers
10” adjustable wrench
6mm and 8mm Allen wrenches
one small or medium henway
one stubby and one std Phillips and flat blade screwdrivers
one foot long pipe for leverage to tire/lug wrench
MB tool kit, lug wrench and jack with wheel chock
plastic fuse remover
utility knife

Parts to take:
One each of all three belts
one each large and small fuel filters
One each secondary fuel pump
two each pipe sleeves to slide inside radiator hoses in case they blow after a belt releases and you don’t stop it in time
3 feet of #10 wire and a small box of crimp ends
one foot neoprene fuel line and one foot mini line for fuel return
Assorted fuses
Radiator cap
Water, trans fluid, oil, brake fluid
6mm or Ό” bolt to put inside cut brake hose, clamped by vise grip to prevent loss of all braking
10’ bailing wire
Uh? That's a lot to carry around. .. why? Are you a long way from home?

In trunk around town, I'd carry a set of fuel filters.
Wrenches to change them.
Fuses.
A 17mm open end for bleeding injector lines...
That's it...

Now for a trip I'd carry more but it's just not needed near home.
