I'm sure it can be done if you have the patience and fortitude to try.

Look at this. That will give a little insight to what you'll have to do. As far as attachment in the 560, nothing should change because you will use your seat frame, just move the new leather to your seat.

It's a long slow process, but my results were well worth the effort. Granted I only did the front seats. The rear seats have a couple extra pleats, at approximately 30-40 minutes per pleat.
