Just a bit of additional info that might matter. The restaurant oil and their cubie containers are sold by weight , most often 35 pounds rather than by volume which is closer to 4.25 gallons.
So at 35 pound per cubie you could in theory in a 1-Ton carry 57 cubies of WVO and remain within the 1-Ton parameter. So that might increase your estimated carry capacity by almost 50% making the trip more worthwhile.
