I have one of the mercedes specific telescoping ones like this that I use https://www.ebay.com/i/122357924475?chn=ps

It works well for the 201, 202, 124, and R129 cars. The late 107s have the updated w124 type suspension and should be right in the front. When I've used it on my 74 450slc it has worked fine for me but I usually do the rear springs by compressing them against the control arm and unbolting the shock and sway bar before wigging the spring out.

Alternatively you can use a jack and just make sure you run a chain or heavy rope through the spring and control arm to prevent it from escaping in case the jack slips.
