There is no mechanical throttle linkage between the M103 and the chassis. It is a cable. You should remove the fan shroud (if I were doing it, the fan blades as well. I believe you will have to release the tranny from the crossmember as well, but not 100% sure (It couldn't hurt) You will have to block under the engine and bellhousing to safely raise the engine/tranny assy high enough to get the mounts out. Great care on the sump of the M103. It is aluminum.Yes, do remove the upper radiator hose. If you don't, there is a remote possibility that you might crack the neck of the plastic radiator tank.
