How can I end up with a dead smooth coat? Mine is not exactly smooth right now...

I am on about the 5th coat.
Would you recommend sanding every few coats or so?

I sanded mine between coats with something like 400 or 600 grit wet/dry sandpaper. Just enough to scuff it up a bit. I think I had about twenty coats on it by the time I was done.
