A vacuum leak which is preventing the vacuum shutoff from quickly doing its job. Check for old, cracked, oily leaky rubber vacuum hoses and replace.

Door lock actuators and climate control elements are frequent causes of vacuum leaks. To help isolate the problem, see if there is a difference in shut down with the doors locked versus unlocked, heater on versus a/c, etc. Until I replaced a door lock actuator, my car would only shut down with the doors locked.

check all your "Y" and "X" and inline rubber couplings on the vacume hardlines. They should all fit real tight, if any are loose you found your problem.
