So increasing the diameter with a larger bolt isn't an option at this point...

Without all the hardware directly in front of me, I can't say for certain.
However, a proper Helicoil for an 8mm hole will be at least 10 mm in diameter. So, clearly, the head won't have a problem with this. If the hole in the manifold will clear a 10 mm stud, then this seems like a perfectly good alternative. Even if it won't, you might be able to locate (or have a machinist make) a 10 mm x 8 mm stud. 10 mm to fit the head and 8 mm to fit the manifold. |
