A few thermostat questions

I opened up the thermostat housing on my 240D to check the tstat. I expected it to not be there since it was running way cool. Instead one of the legs of the tstat was broken ! It was a MB OEM marked one. I put in one I got from my local parts house, it was a french made Calostat , I think ? I hope that's OK. But here is my main question. It appears there were two types of tsat housings, one with a bypass. Performance products actually shows two different part numbers for the tsats. My car does have the bypass. Is there any difference between the tstats (bypass / not bypass )themselves, if they are both marked 80C ? At idle the 240D today is only getting up to 60C in my driveway. I have not taken it on the road yet after the change.
