Is there a way to change the air / fuel mixture on a 1983 240D? Mine seems to be running a little rich. I would like to lean it out a little but don't know how? Is this even adjustable?

There is no air/fuel adjustment on these diesels. You are thinking of gasser terminology. "Rich" does this mean excessive smoke? If so this is a sign of incomplete combustion and some common symptoms are low compression and/or incomplete atomization of fuel.

Try these:
Air/fuel filter change
Valve adjustment
Timing check
Timing chain wear
Injector cleaning/rebuilding
