Cleaning out intake valves
My intake valves are all crudded up, and I have easy access to them now that the manifold is off. Is there any way to clean them? I suppose I could spray it with carb cleaner, but would that cause problems when I first start it up? Or should I forget it and leave the valves as they are?

The appearance of the valve on the surfaces that you can see is meaningless. It's the 45° valve face and the 45° seat in the head that matter. If you are getting a perfect seal at this location, the engine will perform very well. Unfortunately, after 200K miles, this seat cannot be perfect anymore.
