Driving with nothing on, probably less than 2amps.

With all the stock electrics running (lights, A/C-heater, windows, brake lights, radio etc) it should be less than 55amps. The glow system can take up to 80amps, but only when the engine is not running.

I am thinking of adding on some heating sources so that I can run VO in my MB.
I need electrical heat at the same time that I am heating the glowplugs, how many amps do you think I have to spare on the 55 amp alternator when I am starting the car up?

Starting the car has little to do with charging amps as the alternator isn't putting out power until the engine is running.
In the winter, with rear defogger, mirror heaters, defrost blower, lights, wipers going, you're consuming far more electricity at idle than the stock alternator is able to put out. If you're planning to add electric/resistance heaters, I'd add at least as much alternator capacity as the maximum combined draw of all added heaters plus about 10amps.
