One thing I did to learn how to get the dash out, was go to the junkyard and pull one out. Then if I broke something, it's wasn't my car, and I'd know how to do it better and faster when I took mine out.

RE: R&R Dashboard
I have done this job twice on my w126 300SD to replace my climate control vacuum parts. First time, it took 12 hours; second time it took 8 hours. Reinstalling the various connections was surprisingly logical and difficult to not reinstall properly. Definitely recommend replacing all vacuum parts while in there.

On a W123 if you are just taking out the dash and not the centre console then I'd say about 3 hours for someone being really careful all the way down to 30 minutes for a clumsy brute with pigs' tits for fingers...

From what I've read in different threads, be very careful with the aluminum trim on the windshield and consider a professional reinstaller with a factory gasket.

I have removed half a dozen 123 dashes, and only removed the 2 column nuts behind the cluster. Never needed to remove the steering wheel. The entire job only takes about 15 minutes. Installing one is another story. It takes at least an hour just to install the dash, not including any repairs underneath (vacuum pods etc.).
Also, if windshield replacement is part of the job, it is best to install the dash BEFORE the windshield (agree with Whunter)
