People over-torque the pan bolts, crush the gasket, and possibly warp the pan. The bolts are supposed to be 7-8Nm and not many folks have the correct torque wrench for that.

Test results.
I tore out the cluster early today and replace some bulbs and paint the needles. After that I bolted up the rear of the transmission, put 5 L of fluid down the dipstick and gave it a shot. It seems to be shifting. I held the engine at 3000 rpm, and started out with the shifter in 2. I moved it up to 3 and rpms dropped a bit. I moved it to D and it dropped again. So it looks like it is shifting. Its very difficult to feel/hear anything w/o the drive shaft installed and the exhaust blaring out in my garage. The trans might still be slightly low on fluid but that'll be sorted out when I get it on all 4 wheels again. I've gotta bolt up the drive shaft and exhaust at some point. Not sure if I feel like doing that today or not.

D Day was yesterday. I bolted up the driveshaft, exhaust and everything save for the encapsulation panels, an exhaust shield and the front driveshaft "if the flex disc brakes" support.
Dropped the car back on its wheels and went for a drive. IT SHIFTS. Thank goodness. What an annoyance all that work was though for a measly $6 in plastic gears.

So far I am happy with them. I've only driven the car around my block a few times. They seemed firm and normal to me.
A question on flex disc bolts though. On the front flex discs, the bolts are install with the bolt going towards the engine (the only way I could see being able to access the alan head) (nuts on trans side) On the rear flex disc I installed them all bolts going outwards towards the rear (nuts on diff side) I couldn't see any issues with this as they're all torqued down to spec and everything seems fully seated. Any thoughts on this?

On a W123 you are meant to have heads facing the centre bearing - I'm not sure about your car - check the FSM?

The bolt heads on the front caliper face the center bearing...The rear as well. I wasn't going to be able to install the bolts the other way, the diff housing was impeding that and the only way to get that to work would have been to flex the disc a little, which required dropping the drive shaft again and at that point in time I said no way.
I shall check the 201 FSM.
