Also, can I bypass the servo for heat, and still have A/C in the summer?

It depends. You need at least a partially functioning servo to get AC. From your systems' behavior, I'm guessing the servo is not functioning enough.

Thanks everyone for your help and thoughts. I did a couple things: I felt the engine temp was running cold so I replaced the thermostat. It now runs at the proper temperature. And I was able to get heat from the defrost setting, which will blow you out of the car but at least it's heat. My MB tech said he'll troubleshoot the system and see if he can figure out what's wrong, but I'm just running with basic heat right now. He seems to think it's not the servo itself but some other part of the system that's not working right.
