How hard is 602 into W201 190E body

I could get a clean '93 201 body cheap, but it's got a gas engine in there. How hard to swap the drivetrain from my 87 201 190D in?

It depends if you're starting with a 2.3 or a 2.6.
2.6 relatively easy
2.3 break out the sawzall and welder

Non-Turbo 190D 2.5s use the same 1-piece core support as the the 2.3 gasser.

I don't know why Mercedes used the 2.6 2-piece core support in the 16V and the 2.5 Turbo.

2.6 body is nicer besides the issue with the radiator support rusting out. More room to work on the front of the engine.

To clarify then, With an NA 2.5 and 5spd, a 2.3 gasser would be best?

I say the 2.6 body is best regardless. It's a 5 cylinder engine. Have the removable core support and extra room is a no brainer.

What would come from the donor then?

Driveline & shifter
Speedometer
Exhaust
Motor harness, ECU, ignition lock
diesel tank & lines

Anything else?

I was looking at a 602 swap into a 95 e320 wagon and the forum concensus was 'don't mess w/ the CANBUS madness'. Are there similar issues w/ the 93 W201?

Glow plug parts

No there aren't any issues like that on a 93 W201. The newer 190s are the same except for small changes here and there.
