if someones persistent about trying to make an offer on a car im not intending to sell, I usually tell them sorry, it has sentimental value, not for sale. That ends the conversation usually. Or I tell them to go find one, they are usually pretty reasonably priced, but this one is mine. This happened all the time with an old 60s buick I had. Sometimes those conversations bring fruit though, ended up selling that buick to a guy who gave me his card a year earlier saying call him if I ever wanted to sell.
I did get into one of these low ball fights over a 50K mint 91 miata I had once though, Kelly blue book valued the car at 900 bucks, eventually sold it for 2800 bucks to a miata guy. Had several people come by, one offered me 500, and strangest of all was I had at least 3 email/text exchanges with aggressive kids saying I would never sell for that price and they would do me a favor buying it for the usual xbox trade and endless payment schedule deal idea.

Well there seems to be an amazing amount of stress involved in selling stuff!
I just had this woman come round to buy some more baby stuff - she couldn't put down her smart phone... ...it made negotiations very difficult. It would have been quicker to befriend her on facebook and communicate that way...
