He works on MB's ALL....THE.....TIME. How does he not know this??

This a common issue.
Gasoline MB are much quicker to drain down.
Diesel vehicles take special knowledge, and unless you work with them all the time it is easy to forget.

I blame much of it on education and high pressure in/out repair = the Current popular business model...

IMO; Diesel owners are more likely to check fluid levels, actually watch (pay attention to) the gauges, and maintain their vehicle.
