The basic rule of thumb is that you don't. Generally, the pistons are EXPENSIVE and sleeves are relatively cheap so if the bores are worn to the point that you can't just hone them and install new rings the smart money is to sleeve them back to stock dimensions and reuse the pistons. This, of course, involves machine work but is generally thought to be the best route.
The good news is that these blocks are pretty tough (I suspect high nickel content iron) and most of the time will clean up with a simple honing. New rings, bearings, gaskets and the like are available on Pelican Parts (see the top of this site).
