Is it worth it?

In two weeks, I'll have the chance to visit a PNP that has several MB W123s. They are fairly complete.

Is it worth it to take off the oil coolers/cooler lines? Especially if they are cheap?

Only if you can squeeze the hoses with your hands... Hard hoses are old and near failure.
