Testing AC temperature sensor procedures

As part of my continuing mission to explore new worlds...I mean fix my AC, I am testing various parts to ensure they are operating. One of those was the aux fan temperature switch at the drier. I hooked it up to a multimeter to check continuity, then slowly heated it. It eventually turned on (though I dont know exactly what temperature), but noticed it took quite a while to turn off. Obviously it's got some mass, so it wont react immediately - but is this normal? I would say it stayed on for at least a minute or two after it switched on and I removed the heat. Does it possibly have a circuit to keep it from cycling rapidly? Are these failure prone?

The other part I wanted to check was the ETR switch. The FSM indicates that it should switch at 0-1 degree C. I am guessing I should just dip the probe in some icewater and look for it to complete/break a circuit?
