I'd like to recommend two shops in the neighborhoods of Umm Al Ramool and Rashidiya in Dubai. They are both very close to the DXB airport.

Shop 1 - Don't know the name, they specialize in Mercedes, new and old. The oldest I saw was a W116 450SEL.

Shop 2 - Right at the corner; don't know the name. Specializes in older models like W123, R107, W116 and even W100. Newest car I saw was a W124 E500.

Shop 3 - AAA Service Center - A little bit more of a generalist, but they sure know hydraulics. Saw a Grand 600 and a Unimog.

These people don't speak much English but from what I have experienced, they do pretty good work. Except for #3, these shops are the mechanics of choice for the local Arabic classic MB dealers/flippers.
