LH, ECU hacking. Where to begin

Does anyone here know of a good resource on how to fool around with the computers that control fuel and timing? I am mainly interested in the computers for the M119 and M104. I was able to bypass (so far) the closed loop fuel adjustment on my C36 TT by disconnecting the O2 sensors but would like a more elegant solution including timing.

Are there any tools for interfacing with the LH and ECU? We used a special board that you plugged a chip into and then used VHDL/MAX+PLUS II/Quartus II to "upload" our logic into the chip. I assume there is a similar "board" that you plug the ECU/LH computer into (if it does not have EEPROM etc. IO ports that you can hook to a computer built in).
