After talking with my technicians and Luke, I have decided to do the following combination:

WHEELS: Mercedes-Benz 15" x 7J 8-hole Sportline Edition (W124 '92-'95)

TIRES: Michelin Pilot SX-GT 205/60VR15

What are everyone's thoughts? Anything you'd do alternatively? I will pretty much only use MB authentic wheels or AMG stuff, so the replicas are out of the question.

Daniel,
I think you've got about the best combo you can get without getting into "modified" kind of stuff. Since you will be having the Sportline rolling stock you may want to eventually consider a conversion to OEM Sportline suspension. A good first step is have the car aligned to Sportline specs. Enjoy your new wheels/tires, you've got about the best "stealth" combo I'd recommend.
