ah, i have more tomatoes than i know what to do with and could use a good salsa recipe.. i know there are some "chefs" on here and some folks from the SW... please share

It's not salsa, but...

Ultimate Tomato Sandwich
--------------------------
Toast a slice of white bread, and let it cool some
Spread with mayo
Take one of your plump tomatoes and slice it as thin as possible
Layer the slices on the bread
Sprinkle with salt + pepper

The best ever!

chopped cilantro
finely diced peppers
diced white onion

lemon juice

6 cups chopped ground
3 cups jalapano peppers - leave seeds if you like it spicy
2 cups chopped green pepper
4 quarts diced tomatoes
1 quart white vinegar
8 teaspoons pure garlic powder
2 teaspoons onion powder
2 tablespoons ground corriander
1/4 cup salt

I use a food grinder with a course blade for everything
place all in large pot bring to a boil simmer 10 minutes allow to cool then fridge overnite.
People will beg for recipe

yeah i got a little batch in the garden but probably not enough for all the tomatoes.. but i also have this Peruvian (can't remember name) herb that i was planning on using instead...

no blender either. :( but keep'em coming... looks good.. i'm gonna try a batch tomorrow.

Two cups of diced tomatos with seeds and liquid discarded.
One cup of diced onion. I like Maui onions when I can find them.
One bunch of fine chopped cilantro.
Four diced large FRESH jalapeno peppers with seeds removed. Fresh ones aren't hot like the pickled ones are. More like bell peppers.
If you like it kinda spicy add one fresh seeded cerrano pepper.
Juice of one lime or one half lemon.
One teaspoon of minced garlic.
A pinch of kosher salt and a pinch of refined sugar.
One shot of good tequila.

I use this as my "base" for several dishes. Add three or four large avacados for guacamole. Leave one whole avacado seed in your finished batch to keep it from turning brown so quickly.

He who eats pepper seeds will regret it the next day, eh? :eek:

1 diced mango
3 tomatos seeded and peeled
1 red onion
diced and seeded fresh janepenos to taste
1 diced green pepper
1 tsp cilantro
freshly ground pepper
1 clove minced garlic
juice of 1 lime.

doesn't keep long, use within a day, I find in the summer its great to stuff the caity of a whole salmon with the stuff wrap in foil an BBQ. Also great with chips.

here's what I do.

Drink a Turbodog and think about the salsa.

Open another Turbodog and take a sip. MMM-mmmp! Cest ce bon, chers!

Get 2-3 large, aromatic cloves of fresh garlic and mince.

Take a sip on that beer and taste a bit of the garlic.

Sip the Turbodog. Mmmm-mmmp!

Get out a large cast iron skillet, wipe it out, and heat that sucker up.

Sip of Turbodog.

Mince 1/2 an onion.

Sip T-dog.

When that skillet smoke, pour in some cheap olive oil.

Sipp T-Dog.

Drop in the uniongs.

Slip T-Dog.

mince a cayenne. Hell, mince 3.

Open another Turgodorg and take aman-sized sloop.

Dump the minced yayenne peckers into that ****.

Swallow a coopla gumps of beer. That ****'s good, yeah.

Measue a coupel of teaspoons of cilantro and stir it igntoof the plying fran.

Pull another snort off that berr and open agnuffer.

Oops! about 1/4 of the jar of dried cilantro scrape itt off teh counter and dunkp ip info the plying fran.

Grink some gore feer.

Slice and cross-slice a whole ****-load of tompateoes and

pinch whatsername on the ass. She lloks good when you're drunk and you know she loves it when you grab her boobies.

get that ol' Jack Daniel's bottle out and take a shot. Man, that wikzy ivv smooht.

Frying pan is smirkking. heck, it taste better if it is browned a little. Dump in the tomatoes and a hang-pull of smalt.

Where's black-jack? hey buddy. Gulp! Chasing it wuth bir shure is gut.

Trun off stove.

Grab the chips and sleep on the couch. She'll clean that **** up. Heck, I cooked it, right?
