Chili
All this talk of chili on the other thread is making me hungry. You got your “Texas Chili” your “Chili Colorado” and “Chili Verde” Chili Beans (Colorado over refried's) and your Texas Chili with beans, and then there's that Midwestern tomato stew with hamburger, onions and kidney beans. So what's your favorite and any good recipes? I'm real partial to Chili Colorado or Chili Beans myself, but must admit that when I make it, it's generally that Midwestern tomato stew w/... and pretty mild.

Nothing fancy, but it's good and it's easy.
1 lb. ground beef 1 yellow onion 3 medium cans tomato sauce 1 medium can red beans (not kidney beans - yuk) 1/8 cup sugar 4 - 5 tblspoons chili powder salt/pepper to taste Pour chili over spaghetti. |

A combo of the midwestern and texas with venison. My key spices are beer, bourbon and cinnamon. I used to heat it up good but we keep a bottle of the hot stuff on the table so you can apply your own heat.

1/4 pork 3/4 beef.
Lots of garlic, some onions, a bit of celery and some salt. Butt-burning, anus-activating pepper. And (sorry Leo) black beans. Yes, pour it over about 1/4 (vol/vol) rice. Drink with lots of amber beer. |

I made a batch of chili yesterday. Instead of scratchbuilding, I slacked and used Wick Fowler's recipe (cooked in the 'false alarm' mode) and a big shoulder roast because it allows you to simultaneously drink Martinis and cook chili without truly embarrasing results or greasy hamburger build up. Leo don't get all riled up like those cartoon people it's chili!
I do agree Macaroni does not work in chili when reheating 15 times it turns to crap. I am going to take a whack at B's chili this week and will follow it with a batch of Bareback chili like yours. |
