No Soup For You And Other Recipies

Fall is upon us and I thought it might be a good time to share some soup and or stew recipies with our fellow forum members. I know there are many great chefs amoung us, me not being one of them my talents lie elsewhere....

Cook 2 cups of leeks or scallions or both in 2 tbs butter until tender. Add 6-7 cupes chicken stock, 2c sliced potatoes, 2 c diced carrots and 2 c diced turnips or rutabega. Cook until tender--about 20min. Remove 2c of the vegetables. Puree remaining. Reheat soup, add removed vegetables, add 1 c heavy cream, heat but do not boil. whisk in 2 tbs of butter.

Consume with relish.

Isn't that the place where they have the recipe for the best smoked buffalo brisket south of the Canadian border?

Gillys Moms (Annas) Potato, Celery and Onion soup

2-3 Potatoes (2 cups) peeled or unpeeled, then diced
1 cup chopped celery
1 cup chopped onions
put this all in a kettle with just enough water to cover
Add 2 "or so" (gotta love my mom!) boullion cubes, any flavor, or just some salt
Boil til tender
While the veggies are cooking, make some spaetzle, this is just 1 cup flour and an egg, mix it up with a fork to make small nodular noodles, German noodles.
When the veggies are tender, scoop a bunch of them out and put in a large-ish bowl, then add the spaetzle and let that simmer for 5-10 minutes to cook the spaetzle.
Then put the veggies back in and also add 1 can of evaporated milk, let that heat a bit and it's done.
Very simple, college kids can eat on this for days. I had this alot growing up. Depending on the boullion used it can be a vegan dish. My mom did several variations on this, with cheese added, with broccoli or cauliflower or other veggies added, or if you want you could cube up some ham or bacon and add to it. Really good eating on a cold fall or winter day. Oh I add lots of pepper to it too, it's pretty hard to ruin it.

Green Tomato Pie

I am eating Green tomato Pie as I type and it's great. Just google it because there is a bunch of ways to make it. Gotta do something with those tomatos that wont get a chance to ripen.
