Hey Good Lookin What's Ya Cookin For Turkey Day?

FOOD THREAD! Since T-Day is approaching and I know the forum possesses some of the greatest chefs on terra firma, how about sharing a recipe or two? This year Mistress will don her finest leather apron and cook Cuban food for Thanksgiving- marinated chicken, black beans and rice, yucca, plantano maduro, mango salad with coconut and pecan pie. This is if I don't drink too much Sangria...

I will probably deep fry a turkey, cook a Smithfield ham, make oyster dressing. My wife sometimes makes pumpkin ravioli, cranberry chutney and some pies.

You got a recipe for that pumpkin ravioli? That sounds good. We made some squash ravioli last week that we ate with filbert butter; the ravioli had onions and chopped up portabella in addition to the squash. It was pretty good. It was our first attempt at ravioli since getting the pasta maker for the Kitchen Aide.

I'm going to smoke a turkey. I was thinking of trying a chutney as well; I saw a recipe for a cranberry/pear chutney that looked good. We'll definitely make some sort of soup. I'll make some eggplant parm, too, becuase at least one vegeterian is coming. I will probably do that tonight and freeze it, actually.

Guests can bring the simple stuff like mashed potatoes and green bean casserole. I may have to make a pie but if a certain person who happens to be an expert pie maker comes, I'll let him take care of that.

And we will have very large quantities of egg nog and brandy.

If you make this easy cake, I promise not one piece will be left and everyone will want the recipe

1¼ hours 15 min prep
Change to: servings US Metric
1 (18 ounce) box yellow cake mix
1 (3 3/4 ounce) package instant vanilla pudding
4 eggs
1/2 cup vegetable oil
1/2 cup cold water
1/2 cup fruity white wine
1 1/4 cups chopped walnuts or pecans, divided
GLAZE
1/2 cup softened butter
1 cup sugar
1/4 cup water
1/4 cup same fruity white wine, as used in cake

Use a BUNDT cake pan
CAKE.
Mix all ingredients, except nuts, with electric mixer for 3 minutes.
Fold in 3/4 cup nuts.
Grease and flour 10 inch tube pan.
Sprinkle remaining nuts on bottom of pan.
Pour batter into pan.
Bake at 325 for 50- 60 minutes.
GLAZE.
Combine all ingredients and boil for about 1 minute, Drizzle over cake which has been pricked with toothpicks, Leave in pan overnight or at least 3 hours, Best if made 2-3 days before serving

I don't think I'll be cooking anything to speak of, but I plan to do plenty of eating. I'll probably have some marinated chicken, black beans and rice, yucca, plantano maduro, mango salad with coconut and pecan pie. Yeah, that sounds real good, right there . . .

I will be joining the family and friends for a turkey deep-fryathon. Usually about 20 people so we deep-fry 2 turkeys for the dinner. No use in wasting all that oil on just 2 lousy birds. All the families usually bring a bird along to deep-fry for home. Last year we did 5. This year perhaps we will beat that record with 6.

We usually inject the birds with olive oil and garlic marinade. Takes lots of fresh garlic, a quart of olive oil, blend, and soak overnight. The next day the oil will be nicely seperated and infused with garlic. Give that bird several large injections. Yummy!

I had some Wild Turkey just last night, . . about two fingers-worth. I've never tried it with gravy, though.
