Failure at making a Black and Tan
I have not been able to make a successful Black and Tan. I used a tall lager glass and poured the Bass slowly doun the side--no head. Then I tried both the turtle and an inverted spoon. My guess is that the tall glass allowed the Stout to fall to far, and pick up too much speed to allow it to layer on top of the Bass. My next trial will be with a shorter beer glass, and maybe that will help.
Can anyone offer some experienced advice? Please, as soon as possible. I am having company over in an hour and I want to serve them Black and Tans. As it is, I am "forced" to consume all my misteaks, missstakes, uh, failuresss......

try pouring the stout first.....I hope your using Guiness.

I'm pretty sure you're supposed to pour the stout last, that's how they always do it at the bar anyway.

I can keep them completely separated until they are consumed by using two glasses.

Further research reveals that I have the "wrong" Guiness. ( Actually typing "wrong" and "Guiness" in the same sentence was very difficult.)
I used Extra Stout; I have since discovered that I needed the Stout with the gas capsule- Different gas for the carbonation is what I am told. As for the getogether last nite...No one complained about the "failures".

MS, if you're using a tall glass and inverted spoon and still can't get separation, find a sacrificial spoon and bend the handle so that you can get it right down to the Bass level and lift it slowly as you pour the Guinness.
If nothing else, enjoy your practice runs!

That could be the case. I couldn't remember how they did it last time I had one......go figure.

Going from memory years ago when I worked at a pub, we used a bitter (Tartan) with the guiness, and yes you need the nitrogen gas for this to layer so the can or bottle with the pellet is essential. We never wasted much effort layering it, the tartan was fairly dark in colour, so it never really mattered much. I always recommended a sleeve of each if someone wanted them separated.
