Only if they accelerate or make a turn, I imagine @ mach 10 it would not take much of a change in altitude or direction to pin people to the walls/ceiling/floors.

how does a rocket, jet, or whatever reach Mach 10 without accelerating pretty hard?

They do accelerate very fast. Ever watch CNN when a rocket goes up. The telemetry gives live speed and G forces..
