Help with a truck question.

Hi-I tried posting this question on a chevy truck forum, but never got a response. I have always gotton great support from this forum. Anyway. I have an 1996 K1500 chevy truck with a 5.7 engine. I will try to be brief. Basically I did some work that required removing the heads. While disassembling everything. I found the very begining of a coolant leak. After removing the intake manifold. I found some coolant on top of the block. The intake gasket was just beginning to get a little milkyness on it and there was a little puddle of coolant floating in the oil. I assumed it was the intake gasket starting to go bad. Knowing that GM always kinda of had a problem with premature failure of intake gaskets. The truck did not indicate any problems nor had the engine ever been overheated. Now having everything back together. I have put almost 4 gallons of antifreeze in the radiator. I fill it to the top and air will slowly leak out. Then the level will go down to about to the first coil in the radiator. The entire system was pretty much drained out. I just think almost 4 gallons is way to much and still not being filled. I started the motor up for the first time. It ran a little rough not real smooth. I do have a check engine soon light on and the gas is almost a year old. I think the motor not running completely smooth is from the old gas. Which I am going to drain out this weekend and also I am not 100% sure on all of my connections on the emission parts. Which I think is causing the light to come on. I am going to try to address those issues this weekend. But my concern is the amount of coolant that I have put in and the raditor not being filled. How much coolant should fill the system? I have not actually drove the truck yet because I am doing some suspension work that is not yet completed.

A 5.7, after a complete drain, takes just about 4 gallons, including the overflow bottle.
