I think we've also found a food/theme for a PA GTG....

Can't argue with you there - whoopie pies and shoofly pies are also known to rock.

Pa Dutch food has seen a million faces and it's rocked them all. Of course, they ride on real horses - not steel ones.

No my friend. The pig's stomach (maw) is not ground up. In hog maw the pig's stomach is cleaned and then stuffed with potates, sausage, onions and whatever else you may happen to have handy. Then this delicacy is either boiled or fried.

I have friends from PA Dutch Country (which they tell me is not Dutch, but German) and they rave about this dish. I could not try it myself.

PA "Dutch" came from "Deutsch" or a "Pennsylvania Deutschman".

My maternal GM family is all PA Dutch and even my mother used to think there was a connection to Holland.

I didn't know that.
The German side of my family is from Germantown and is not PA Dutch, so we never had "hog maw, or saumagen". I think in Germantown the stomach goes into the scrapple.
