My German butcher in NY Karl Ehmer rules, I get fantastic quality beef from them compared to the trash thats usually available in the supermarket shelves. When I am in an extravagant mood, I would splurge on true Wagyu imported from Japan, it costs a lot but is well worth it.

The stuff on supermarket shelves is still pretty good. Choice is choice, prime is prime. Like medmech says, how it's aged sets it apart from the rest.

Guess you should come down here in Staten Island and check whats on the shelves at local Pathmark, Shop Rite, Waldbaum's and Top Tomato. You will change your mind.

one thing about iowa.we do raise the best beef.we usually go in with others and buy a whole cow and get a 1/4.they are soo much better then the store,plus they are touched by one set of hands,not 300 in the packing house.

Wouldn't that be a bit gamier and lean so I would assume a bit tougher than beef.

Yes, I want to eat an animal that has been standing shoulder to shoulder with 400 other close friends for the last 10 months, hock-deep in manure and urine and fed corn until it's liver is full of lesions.
