Anything specified "Ref. after open" I toss if its been left out too long, and by too long i mean like 12hrs. Unless you and the family has iron stomachs, lol

What temperature are your rooms? Until I moved to the US when I was 11 yrs old, I never saw a house with a refrigerator. We ate lots of custard pies that sat around in rooms for a long time, not to mention eggs and milk in the cupboards.

While mayonnaise and other similar egg emulsion products is slightly acidic and inhibits bacteria growth, the general rule for these "uncooked" products is roughly two hours, less if the ambient temp is higher than 80 or so, such as at picnics or outdoor events.

For cooked proteins, I would say that 4 hours at room temp puts the item in "the danger zone".

In the food safety circle, you can't be precise with every product or situation, so going by the guidelines when you're not sure or don't want to risk the health of someone who might have a compromised digestive system is just being safe. So, yesterday at all the Mother's Day Brunches, the busiest guy other than at the omlet station, should have been the sauce guy making the hollandaise.

I just got home and ate....no mayo included.

So I got about three or so answers and 25 sick puns!

Its nice to be loved!

It smells ok.

Yeah, I know uncooked and uncracked eggs will keep a long time if its not too hot, but you know, I always heard to beware of mayo containing products especially in the summer.
