In the culinary world, there is a growing sentiment that humanely treated animals taste better. Now isn't that a conundrum.

Does this mean...

The Cannibals will have the Comedian limbaugh come in and give you oxycodone IV before they "Fillet" you?
(So, the HS steaks don't taste "Gamey")

Abuse of dairy cows comes down to bad management. Happy cows stay healthier (read "cheaper") and produce more. A few years ago I spent some time on my cousin's dairy farm in PA, and those cows led a pretty good life.

I love my cows. They are amazing creatures and each one has it's own personality and way of doing things. I see those videos and it brings tears to my eyes; nothing except a serial murderer deserves treatment like that. The people that behave that way and the managers that permit it to happen are sociopathic bullies who undoubtedly kick their dogs when nobody is looking.

Dr. Temple Grandin has made a career of changing the way people manage livestock in processing facilities. Big food producers (McD for one) have recognized the economic benefits of humane, low-stress handling...and I will tell you that the cows at BHF have a daggone nice existence because of it. They are handled as gently as possible and are rarely ever ill. To continue the process, I've picked a slaughterhouse/processor that I trust will treat them responsibly in their final hours on the hoof.

The beef isn't too bad either.

I love animals too but if Americans expect to eat $1 a pound chicken, $1.50 a doz. eggs, cheap milk and beef then the system has to be set up for mass production and mass production is not a pretty sight. We have the largest privately owned meat processor in the country in Corpus. I know men, and it is mostly men, who have worked there and they say that most new hires don't last a week, many don't finish the day, and if they do they have nightmares for the first year of working there. I don't know that these people become serial killers or child beaters but this kind of work can not be good for the soul. Still, it is like people complaining about the trade deficit and all the jobs going to China and then shopping at Wal Mart or complaining about the illegals yet not turning down a $20 lawn mowing.

It is no excuse to abuse animals in the name of mass production. McDonald's is the largest consumer of beef in the United States and they manage to remain profitable while handling the animals they use in a humane manner.

McD beef production.

Hooray for Target! They're no longer carrying farm raised salmon in favor of wild Alaskan salmon.
