pita bread sandwhich ideas?

Anyone here have any good pita bread sandwhich ideas? With an emphasis on no meat in it? Fish and dairy are allowable

Melt cheese over sauteed vegetables. Use sweet onions, bell peppers, zucchini and portobello mushrooms.
Feed the pita to the dog and eat the good stuff.

Don't give the pita to the dog; toast it lightly, cut into bite-size pieces, and use to scoop up hummus.

What are you trying to do? If I had some more info, I could make some more suggestions.

We spread some mayo first, and include some green leaf lettuce and cucumber slices. Excellent!

Mayo? Blasphemy. Needs Mediterranean yogurt (garlic, cucumber, dill, vinegar, salt, pepper, a bit of olive oil)

Yes, I am a mayo-using blasphemer - but I like falafel, so it's all good!

Get with a Muenster or cheddar cheese that has flavor but not too much.

Since you are doing this in advance, make this mix:
1.Slice a cucumber the long way and put thin long slices in the sandwich.
2. Add a bit of arugula.
3. Slice mushrooms the long way as well, but marinade them first in a bit of vinaigrette dressing for maybe 10 minutes then pull them out.
4. Add sun dried tomatoes so they do not squirt juice all over, girls are finicky about that stuff.

I once had a picnic lunch like this in germany in 97 but used a thinner bread, red caviar, watercress and champagne. Enjoyable.

how do you propose melting the cheese while at a park?

what type of bread did you use. I kind of like that idea you posted.


I don't have a wicker basket deal so one of my vintage picnic coolers will have to do.

I'm going to go work on my 1920's westing house fan now.

Theirs a Cuban dish that has ,mango, grilled shrimp ,avacodo ,and cilantro ,all fresh from the sea and garden.Plain dishes are usually the best.
