With sufficient demand, it would be possible. However, I think we are at least two decades away from original W123 bodies being scarce enough for a replica industry to work.

You can, however, buy a new '32 Ford, '70 Chevelle, or Model T. There's a company out there building nearly new '57 Chevys, but they reuse a couple of original parts in order to retain an original '57 VIN.
