I raised two pigs last year and had them butchered. Wanted to butcher them myself but the weather didn't allow it. We are still eating those pigs on a regular basis. Good eating.

Bacon, lettuce, tomato, onion, egg and cheese, on texas toast if they have it. Just about any place that sells breakfast sandwiches can make one of these and they are real good.

The other way to ruin it is toasting both sides of the bread on a BLT. Only the "inside" face of the bread, with a thin coating of mayo acting as waterproofing on the side closest to the tomato. Toasting the exterior can be rough on the insides of the mouth when you're scarfin' the sammich . . .

Oscar Meyer seems to be the standard of quality in bacon round hyeah. Safeway has a pretty good price on it - the club card thing - now, or did a couple of days ago. I stocked up. I put it in the freezer after a cooking up a couple of servings anyway. I don't eat it fast enough to trust it will stay good otherwise. I hate it when it turns.
