A great summer meal tonight
 
We just had BLT's with decent bacon, whole wheat bread from great harvest, with local tomatoes and local lettuce, along with roasting ears from the farmer's market yesterday.

Tom, it's all about the "T" . . . summer is the only time of year I would eat a BLT. Next time you make one, only toast one side of the bread, so that the toasted side faces the middle, so that it doesn't "cheese grater" the inside of your mouth. ;)

Tomatoes I can do without. However, I just came up with a nice variation on tuna salad:

one can tuna
one small sweet onion, diced
fresh garlic to taste (I used four cloves of locally grown elephant garlic), sliced
two tablespoons olive oil
1 tablespoon capers

Saute garlic and onions in the olive oil until the onions turn clear, transfer to a bowl, add tuna and capers, stir and enjoy on crackers or straight from the bowl.

We don't toast at all. I always order sandwiches on not toasted bread for the reason you state.....although sometimes I forget.

nothing beats peanut butter on a BLT i will get a "side" of peanut butter when i get the BLT out and apply it myself. To me its as important as the bacon, lettuce, tomatoes :)

Actually I might just have to give that a try sometime, although I do enjoy the simplicity of a plain ol' BLT. I do love me some peanut butter.

i also put mayo on there..mmmmm...but since my wife try's to live the vegan life..not much bacon at the house

My sister went vegan for a year or so (her BF is) for health benefits rather than philosophy but bacon was her weak spot. Well, bacon and lobster. So her orthodox veganism didn't last. She's still mostly vegetarian but will eat meat and fish when the mood strikes. Probably not a bad way to go for those not opposed to eating meat and animal products.

Personally I'd rather be dead than give up critter meat, although I could probably eat less and still be a happy boy.

FAKEN! that's classic! its probably not THAT bad, but tofu/soy stuff does not sit well with me,my wife has not had any meat of any kind in about 10 years, she will have cheese on pizza or something but that about it. i could go vegetarian (or cut my meat back to bible days level of a couple of times a year) if i had easy,affordable access to vegetarian food.but yeah nothing beats a good cooked over an open fire critter of some sort ;)

The BLT is indeed one of summer's true delights. My maternal grandmother was a SE Texan and so cooked a mixture of latino and southern stuff. She served black eyed peas with tamales for New Years for example. Her summer Sunday lunches I'll miss forever and have never been able to exactly recreate.

Buttermilk marinated fried chicken
an enormous platter of sliced tomatoes from the garden
green beans cooked with fatback pork
huge glasses of headache cold sweet tea (my grandpa snuck whiskey into his, he thought nobody noticed but everyone knew)
homemade lemon meringue pie

One of the favorite Summertime meals for supper here is the great BLT, with potato chips 'n dill pickle spears.
