Picking Pedals

This is kind of a survey question. How do you pick pedals? I'm asking because I've seen several pedal packages that will say they fit anything from a "C" up to an "S" class and I can't imagine a one size fits all pedal would be appropriate for all models.

So, do you pick pedals based on size, design, or just basically function(for example you heel/toe a lot and a certain pedal makes that maneuver easier)?
