Roll your own

https://www.theatlantic.com/magazine/archive/2013/11/the-new-science-of-old-whiskey/309522/?utm_source=aofb

I know a fellow who is cooking his own moonshine without the formal government relationship entered by commercial distilleries.

The distilled product is 80% corn liquor and 20% malted barley. Uses a thumper keg and returns 140-150 proof down to 80 proof on the tails. Below 80 goes back into the thumper for the next run. Aging is done using charcoaled oak and alternating on a daily cycle between a freezer and ambient temp for a month or so. The product is smoother than bourbon, more like Canadian.

Any of y'all have friends making their own?

Not whiskey, but I know some folks in a few mountain villages in Sonora who make a moonshine mezcal that is locally known as Bacanora. You can't buy it, not anywhere. I am fortunate to get a bottle a year or so. Amazing stuff, and I am not a big fan of tequila-like spirits.... a long and not pretty personal history ;-)

Love to taste that shine of yours Bot!
