Flare fittings, NPT (national pipe thread) fittings, run a search and find a million places that have them on the interweb, usually double flare 45 degree i believe, you can pick up the tool from craftsman to flare the tubing for $45~ and another one for bending tube at about the same price. The AC hose is a bubble crimp, or something similar, its a standard for those types of hose, can be done at Autozone usually. PS is probably a little of both. The stuff that comes on old German cars a lot of times is just a hose clamp, not cool.
I get stainless tubing from a hydraulic shop for my brake/clutch lines, if you can't find one I can give you their info. If you want to check it out, you can use A/N fittings that use a 37 degree flare, apparently better and easier to work with, mostly red and blue pretty colors, but mostly just used for flexible line, I personally prefer to use as much hardline as possible.
