Your ET has nothing to do with your reaction time. The timer starts when you trip the light. As far as trying to shift yourself, in all my years of drag racing, I have never seen a human shift as fast as an auto trans, You need to get on a good NHRA track, at best, to be able to hook up, with little tire spin, it's not your fault. You can reduce the air pressure in the rear tires a bit, like down to 20lbs or so to help you get grip, it will take some practice to learn to hook up!
