The 617.95 engine features a bypass passage integral to the thermostat housing. With that in mind, drilling holes in thermostats makes no sense whatsoever.

I have a known good Wahler thermostat if you want it. It kept my 300D at 85 degrees under normal operating conditions. (I replaced it on principle in conjunction with a new radiator installation.)

Sounds like the thermostat is doing a great job of controlling the temperature, but at a level that's about 15* too high.

I think I would subject the thermostat to a stove top actuation test.
